I've been finding that if I'm in a definite 3G area my phone will read it as E. If I do a reset it'll return to 3G, but won't automatically shift to 3G on its own. Anyone know why, and if there's a fix for this?

I'm assuming you have 3G enabled. :p I'd try to reset your network settings.
 
Well the iPhone has been known to have trouble with vertical handoffs so yeah....I don't have an iPhone but let me take a shot cause I know quite a bit. Is there a way to turn off EDGE? if so try that. Also is there a way to prioritize 3G?

No way to turn off Edge and 3G is by default prioritized. It shouldn't be happening. If resetting the network settings doesn't work then I'd call AT&T. It should switch from 3G to edge if there is 1 bar or something like that. If your 3G signal is too weak.
