I know that iTunes has its own back up system to CD's / DVD's, and I'm just wondering if there is a way to do the same thing except on an external hard drive. Thanks

A couple of ways come to mind.

You can clone your HD to your external with Carbon Copy Cloner or SuperDuper.

Or you can copy the Music folder inside your user ID folder to the external HD.

Thanks for the link to Deja Vu, I am using it now, it seems like a great program.

There's a third -- Back Up, part of .Mac, will do it
Good addition.

However, .Mac can only handle 1 or 2 GBs of backup data. My current iTunes is in the 30's.

I'm using Déjà Vu for a daily backup of the Music folder and the Library files. And I'm very happy with it. :)
Sounds interesting.

Can you back up a Boot Camp partition with it? Curious. TIA.

You've misunderstood. Back Up can be scheduled to back up to external HDD's. Mine is doing that right as I type this! Including my 60Gb of iTunes and all my Aperture files.

maybe too late but ...

would anyone have an easy method for backing up to hdd for windows?

thanks.

if ur asking about the bootcamp partition then what i do is what i have done in windows for almost a decade, that's acronis. home 10 or 11 will do. just install in windows side and put on a usb drive or network drive; works great.
