So since apples new update, my 3gs went from showing 4-5 bars to 2-3 bars consistently. However if i turn 3g off and use the old EDGE (2g) network i get 4-5 bars again.

My questions is, from a pure voice quality standpoint would it be better to use the older network?

I really dont care about how fast it is because I use it at home (i work from home) and im on wifi anyway.
 
I had the same mentality with my 3G; left it turned off and used Edge exclusively since I had WiFi at work, my house, and my friends house.

However, I've had better luck staying connected to voice calls over 3G (mainly while driving) than on the Edge network... so lately I've been keeping the 3G on.
