Editing SIM card

Hi can anybody help me. I want to delete some of the material on the sim card of my iphone but I cannot find out how to do it in iTunes. I am using windows not iMac.

I'm pretty sure that's not allowed.

I understand you are able to store contact information on the SIM with other devices. However, I've never been able to do that on the iPhone.
