Am I missing something or do you lose all ability to "Share" via email if your email client is anything other than Apple's Mail.app?

Example:
You set your default email client to Mail.app - you right click on a file in Finder and select the Share option - Email is one of your choices.

You set your default email client to Thunderbird - you right click on a file in Finder and select the Share option - Email is no longer one of your choices.
 
I've read all I can find to read concerning OS X Share menus and Share Sheets, but yet to find any reference to not being able to share via mail with an email client other than Mail.app. Does Apple expect/assume everyone will use only their included apps?

Yeah, sure seems that way. Especially considering that a left click on an email address link will open up your mail client of choice - meaning that the OS is clearly designed to notice when the app isn't theirs.
