Email not staying on iPhone

My wife uses gmail and has mail set to keep last 1000 messages on her device. She has 3000+ emails in her gmail account but can only see 100 or so emails on her device. What else should I check so her gmail account mirrors what's on her iPhone? Thanks.

Yup. Seems it's only set to the last 100.

no, it's a setting on the phone.

settings>mail, contact,calendar>accounts>gmail

Pretty sure I have it setup as an exchange account to get contact sync.
