is there no way to be able to organize mail in a manner so.....
when i receive emails from certain contacts it goes directly to a specific folder, say "work" folder, or "automotive" folder if my mechanic were to email me?

Look for rules in the Mail.app preferences - it is one of the last tabs. You can use this to move mail to folders of your choice depending on the sender or on other criteria.
 
Yes, you can create a filter for said address and make Gmail add any label you want to those emails.

In your browser go to Gmail then to Settings. Click on Filters and then on "Create a new filter". Add the criteria you want it to meet and then the action to be performed. Repeat as many times as you need.
