This issue existed in iOS 13 and watchOS 6 as well as the current ones.

Anyone else noticing that email changes on the iPhone, using all stock apps, don’t appear to always reflect on the watch? It could be deleted or moved. I’ve found the easiest way to fix it, albeit temporarily, is to toggle on or off, or off and on, the Organise by Thread switch in the iPhones Watch app.
