I have 11 folders, all my apps are within the folders. Is it possible to empty all apps from the folders to the springboard in 1 click? Or do i have to drag each 1 out... ?

There used to be a tweak called unfolder that did exactly this. Not sure if it's compatible with ios5 though.
 
you can also install multiicon mover, check all icons in the folder and move them altogether out of the folder
