I installed 3.0 for a friend of mine on their 2nd gen touch, The ipod was empty but in itunes it was showing 1 GB of "other" was on it, there were no videos, pics, apps, or music. Has anyone seen this?

Is it jailbroken? "Other" is usually files on the device that iTunes cannot recognize. Are you using it as an external drive or something similar?
 
No it wasn't JB, Before i installed 3.0 on it i took everything off of it and it show 1GB of other. So i installed 3.0 thinking it would wipe whatever was on it off but it didnt. They weren't using it as a hard drive or nothing, they barley knew how to put music on it lol.

Have you tried restoring to 3.0 again? This might fix the problem and since you don't have anything on the device, it won't hurt.
