Hi,
I have a basic understanding of what I need to know, but would anyone have any recommendations for a DIY external portable SSD solution that would be compatible with a 13" 2015 MacBook Pro?
I was considering using a Samsung 970 EVO Plus SSD 2TB, https://amzn.to/3oKo7Wx
and mounting it in a SSK Aluminum M.2 NVME SSD Enclosure Adapter, https://amzn.to/3lsHWj9 .
I understand that the USB 3 on my MacBook would be the bottleneck in the process, but this solution would afford me some upgrade options with the SSD down the road. I am running Big Sur.
Thoughts?

Unless you absolutely require 2tb of storage space, I'd buy a 1tb nvme blade SSD.

Don't "cheap out" on the enclosure. Look around at others, check user reviews.

You should BE AWARE that nvme blades in USB3.1 gen2 enclosures can get HOT under heavy write loads. Even when running under normal circumstances, they can run "on the warm side".

I need it to keep media for video projects that I may access somewhat routinely, hence the 2TB.
Any recommendations for enclosures that can handle the heat?

I believe almost ALL of the USB3.1 gen2 enclosures will get HOT under heavy write loads.
Some will get hotter than others.
There were reports that the Samsung x5 drives got hot enough that they "throttled back" their speeds under heavy writes.

Having said that...
Unless your media projects involve constant disk writing and re-writing, an nvme based drive will probably work fine...
