Is there a way to just encrypt a few individual files, and NOT the entire hard drive? I have a 2015 iMac 27", and i have a few files that I want to make sure nobody else can get into.

Also, will this work on files that were moved up to iCloud (seems ALL my drive's documents and other files were moved up there a while back), and...I will need to view these files on my iPhone or iPad...will that be possible?

You need a third-party solution for this. iCloud Drive does not support file encryption and using encrypted sparse bundles is not possible on iOS.
