Encrypting a mail with a certificate

Dear all,

I have received an email with a certificate in attachment, that I am supposed to use to send back some document in an encrypted email.

When I double click the .cer file, it is imported in the Keychain (login).

Now, how do I encrypt a mail with that certificate?

In Keychain, I can see that the email adress is correct, but no option for encryption appears in the window of the message when I compose.

Am I missing something? I can't find clear instructions applicable to Snow Leopard...
