I need to encrypt about 500 megs of data. What options do I have as a GUI app?
 
You can make an encrypted disk image in Disk Utility. 256-bit encryption. If that doesn't suit your needs, be more specific about how you intend to use it.
 
DU does 128. I just need something like PGP that will let me do AES-256. I need to store some documents that I don't need broken in to. I want to use DU's encryption scheme then on top of that another with a separate passwd.
 
I don't think it's advisable to make a post on a public forum saying you haven't yet found encryption, and you need to encrypt something sensitive enough that 128 bit encryption isnt good enough ;)

You already seem to know what you want. There's an openPGP implementation available for OS X. That should be what you're looking for.
