So, on my Apple Watch Ultra, I was was able to end a call by resting my palm to my watch. Now for some unknown reason I can't get it to work. I have shut off both devices with no remedy. I know someone may say it's time to unpair and pair again, but before I go through that mentally painful operation I am hoping that someone has a suggestion. Thank you so much, I really appreciate it.
 
I don't think that method was ever used to end the call. I've only known it to silence/ignore incoming calls. I've always had to tap the red button to hang up.

You are right. When you mentioned it I remember that's what I wanted to do. I had it off, and it works now. Thank you for bringing this to my attention. I appreciate your help.
