Is there any app I can use to actually encrypt a file, rather than a disk?

You can use apps based on GnuPG (PGP) : http://www.gpgtools.org/ , for instance.

You can create an encrypted dmg where you can then store one or multiple files. Other then that, you do have GNuPG
