In Entourage in my email list I only see
from, subject line and sent time.

How do I see who the email was sent to or add that column?

I'd rather not have to use the switch user function. My wife and I prefer to have all of our email come into the same inbox for sorting into folders.
 
Right click the heading in the "From" column, then check the "To" option to have that added.

Interesting that you can only do that when the preview is below. That option isn't available when it's to the right.
 
In side preview mode, just right click any visible column heading.

Golly, I hope Office 2008 substantially improves Entourage. I figure it will, since it will finally be Universal.
