looking at some epson document scanners but I'm wondering why they are all still usb 2? that seems like they haven't been updated for some time. buying usb 2 now seems wrong, thoughts?

Yeah, USB-2 is plenty fast enough to keep up with the scan. There’s no reason to go to a higher USB level.

It’d be like having a USB 3.0 mouse or keyboard. No reason for it.
 
I've got a Lightning mouse that I have to use a dongle attachment just to connect to a 2018 laptop, I remember the headache when Apple jumped to FW400 then the next week to 800. Still seems like claiming speed a factor in scan times is another example of products that need some updates, especially when scanners have long advertised their speed being a defining difference?? - Hate to buy a product that was launched over five years ago sure doesn't seem the norm of computer accessories to have such a large gap in years since an update??
