There was this Windows app that was really handy when it comes to printing booklets known as Fineprint.. now that I'm switching over is there a Mac equivalent of such an app?

Fineprint generates N-up PDF files. Do you actually need a dedicated app for this? Every MacOS X app which supports printing can generate PDF files. N-up printing a standard selection in the MacOS X File/Print dialog box. The takeaway message is that Fineprint-like functionality is standard in just about every MacOS X app.
 
Besides N-up Fineprint also supports duplex booklet printing, which is really really handy
 
I don't know if it will do everything you need, but there's a free program called Cocoa Booklet that I use. If you set it up right, you can make a pdf with the pages correctly set up for a folded booklet from the 'Print' screen of any program. Version Tracker link: Cocoa Booklet
 
I use this product with my Mac and it's free. I used something to create booklets with my PC a few years ago that cost me around $50 bucks. I like how this integrates with Services so it is there when I need it.
