Estate or ntfs for my back up drives

I have one external drive that is the for use locally with my mac, I also have another drive that i want to use as a backup clone of the external i use with my mac.

I would like the clone drive to be more universal than my mac one, to be able to use on both mac and windows, and e entertainment setups that have ports.

i am torn between using ntf s or exfat, I like the idea of exfat, but read it is not as stable. What would be the best format to use?
