Does anyone know if the standard itunes backup saves all 3rd party application data? I've heard rumors in the past that it does not, but have never tested it. I found the following KB article that states this:

Application settings, preferences, and data

I'm just not sure if this refers to 3rd party apps and data or if it just refers to apple apps and data. When I upgraded from 2.0 to 3.0 firmware, everything (including 3rd party data) was restored, so perhaps that answers my question. Anybody know for sure?

i dont think its backs up 3rd party apps, just the data for save games etc etc.

Unless the app is from the app store...all the apps from cydia and what not will not be backed up. You need Pkgbackup and Appbackup for that i believe.

does it actually copy SMS conversations? hmm i didnt know that...

Yes, it backs up SMS.

It doesn't back up things that you can get by syncing (music, photos, etc.).
