Excel 2008, Blank cells after I save and reopen

I'm creating a document using all Text in my cells (no formulas), but after I save the document and reopen it later, Text in some of the cells will not show, and I can see spacing issues as well. If I select one of the cells in question, I can see the actual Text in the formula bar, and if I copy that cell, the blank cells re-appear and the spacing issues are fixed... I will then save it again, reopen and the same issues are there (with the same cells). Suggestions?? Thanks in advance...
