from Office 2004, how do you set it up to go to the right each time you press enter. I've searched this forum and Excel help and can't find an answer. In Microsoft Excel you go Tools Options Edit - but no such luck in this version.

You were far away, so close. On a Mac, it's the Excel Menu -> Preferences -> Edit. From there, pretty much just like in Windows.
 
Even better, if you have a grid you are entering into, click and drag to highlight the rectangular area. Do your entries, Tab betweeen them, and when you get to the end of one row, it will wrap back to the first entry cell of the next row.

No more Down, Left, Left, Left, Left

This is what I usually do, too. I think Apple-Left or something similar will also get you back to the beginning of the table, instead of left-left-left-left. :)
