I searched and couldn't find an answer to this question. My apologies if it's been answered before.

I just switched to using a MacBook Pro at work. I have Lion 10.7.2 installed. While this doesn't matter for the purposes of the question, I have the 17" MBP on a stand along with a 24" widescreen Dell and a 20" standard Samsung so it's effectively a three monitor setup - love it in general thus far. The OS stability is what really sold me.

I've set up 6 desktops in Mission Control that I manually switch between using keyboard shortcuts (Alt-1 for desktop 1, alt-2 for desktop 2, etc). That works fine.

The problem I'm having is when I have an Excel spreadsheet open in, say, desktop 2, and I want to open a new spreadsheet on desktop 5. When I click on the Excel icon in the dock, it immediately takes me to desktop 2, where the existing spreadsheet is open. Similarly, if I have a spreadsheet open on desktops 2 and 5, and I close the one on desktop 5, I'm automatically taken to desktop 2 (where the other spreadsheet is open).

How can I stop this? I unchecked the "automatically rearrange spaces based on most recent use" and "when switching to an application, switch to a space with open windows for the application" settings, but to no avail. Other applications aren't doing this. I can click on the Chrome icon in the dock and it won't switch me anywhere, then I can click command+N to open a new window for that desktop. It's driving me crazy. I have each desktop arranged for a specific type of work, so when I'm doing that work, I want to stay there, not be pulled away to another desktop. I want to be able to open a new Excel worksheet at any point and stay on my desktop.

Is this an application thing? An OS thing? Any tips on how to stop Excel (or any other application) from taking me from one desktop to another automatically would be greatly appreciated. I like a lot of things about my MBP thus far but this one is really bugging me. Thanks for any help.
