I have my work exchange Calendar on my mac and iPad, but I am changing jobs but would like to keep the calendar for tax purposes. Will I loose my calendar when they delta my account or if I will is there a way to keep it?

You should be able to export the data to a file, and then later import this data into a new account you create. If you export it before you leave you should be good, but if you wait until the last minute, they may kill your access early (has been known to happen for security reasons).

I checked in both my iCal and my Outlook 2011 and the calendar export option was present.
 
To be clear, I also have my Gmail in there as well, it looks like this backs up both? When I reimport will it reimport both causing duplicates?

I believe you can save individual calendars, so no.
 
I'm not seeing that option, can you point me in the right direction?

Click on the calendar of your choice, then, go to file -> export and the calendar you have click on will be exported. You'll be able to import it afterwards in "On My Mac".
