Is there a way to allow email to search names when connected to the Exchange server, but not add every single person ever emailed automatically to my contacts? By removing contacts from the Exchange settings, it deletes all the contacts, but I can't search by name in a new email anymore. If I turn it on, I can search again, but it automatically adds every person I've ever emailed into my Contacts and I don't want that.

Ideas? TIA!

I think we figured it out, it's in Groups within Contacts, you can define which you want to see. Uncheck everything but "Contacts" and it will only show manually added contacts, but still allow you to search global address book names when composing a new email.
