I've swapped the optical drive in my late 2009 iMac with a crucial 480GB SSD, and I love the results...super-fast, so if you haven't done it yet: Do it! takes 20 minutes and well worth it...
I would now like to swap the original 1 TB HHD (used for storage at the moment) for a 1TB SSD. I'm not worried about the fan problems, as I already have software installed, which controls this for me...what kind of bracket should I use to keep the new drive in place? Any answers greatly appreciated...

A standard 3.5" drive bracket will probably suffice. Alternatively just tape it in place, it's not as if it's going to vibrate itself out of place. Works fine for me.
 
AFAIK, most SSD's come with a 3.5" bracket for HD replacements like you're doing. Mine did, and that was over 3 years ago.
