Is there any way to have the screen fill the entire TV?

I don't mean by messing up the aspect ratio, but just by stretching it vertically (and equivalently horizontally) to get as far to the edge as possible.

Most TVs have a picture mode setting to let you change how the image is scaled. Usually there are options to crop or zoom the image to better fit the TV.
 
Your first picture is Airplay Mirroring, which is limited to 720P. Your TV, with its current configuration, does not appear to scale 720P to 1080P.

Your second picture is Airplay Video Streaming, which does support 1080P.
