My experience so far moving to a new device using the quickstart direct transfer was not really great.

Transfer took 15 minutes, mostly because of photos.
-Apple iCloud service all worked
-Apps have to be redownloaded from the App Store, like an iCloud restore
-Some Apps can't launch, showing an iOS popup that the app could not be installed(Apple support App, OneDirve, Banking,...)
Tried a restart, in the end I had to delete and reinstall these apps, losing settings
-I had two Apple watches paired with the old phone, only for one the transfer worked(started around 10 minutes after restore was done)
-iCloud photo library starts uploading all pictures again, after that it starts scanning faces
-Frequently visited placed does not get transferred
-iCloud share location does not automatically switch to the new iPhone

So using iCloud restore you download pictures, music and apps, with direct transfer you upload pictures again and download apps.
Fastest way to get a fully working phone is still using iTunes encrypted backup with unpairing the watch before doing the backup
