When my MBP restarts, the initial gray screen shows a horizontal progress bar, then another gray screen with another horizontal progress bar, then a screen with four circles with pic's of the MBP's users, or symbols in the circles. I choose my pic, enter the admin password and the machine opens for business.

What is the name of this start up mode? How did I get it in the first place? How can I go back to my old, simple start up?

System Preferences>Users & Groups>Login Options will get you to where you can either have a particular account login automatically (not recommended for a personal computer that travels), just be presented with blank username and password fields, or the way you're seeing it now.
