I have had my MBP 15 i7 for a little over a month at this point and in the dorm room my roommate and I like to watch TV shows off my computer sometime. He has an HD TV 720p. Hooking my old computer (17 G4) I could choose a resolution of 1920 by 1080. Hooking the new i7 up to the monitor the best resolution i have an option for is 1600 by 1200. Is there a reason that it doesn't have the option for 1080 or 720.

My computer is a hi res model and i'm connecting through VGA with a mini display to VGA.

Any thoughts guys?

I am having the same problem with my external display. The native resolution is 1680x1050 and there is no option for it in preferances.

I would try with a Display Port to DVI or HDMI adapter into the TV to see if you can get the correct resolutions to display. You could also try booting into safe mode and adjust the resolutions there to see if you could get the correct resolution to show up.
