If I was to connect an ssd to my imac with a wire would it still be as fast as if I got it built in?

As most people will likely end up telling you, it depends on what type of external connection you will be using.

USB2, Firewire 400/800 will all be slower than internal SSD drives.
External SATA ports will be close (if a hair slower) than internal SSD drives.
Thunderbolt ports (when drive enclosures are available) should be as fast as internal SSD drives (Thunderbolt is actually faster than a single SSD drive).
 
Just wanted to add that if it isn't over E-SATA or Thunderbolt, it's not worth it.
