Extra mail Folders please

Hi,
I would like more mail folders besides Inbox,Trash etc, maybe a few like Work,
Model trains etc. The way I would like it to work is all my e-mail goes to my inbox and then I will move it around so I can keep e-mail and have a relatively uncluttered inbox. I am a windows XP user using outlook fo email. Can this be done??
