Right after activating Siri (holding home button) the phone locking sounds are ludicrously loud. Can I fix this somehow?

That bug's been noted in a few threads here. Hopefully iOS 5.0.1 will fix it but I haven't looked through all the threads to see if anyone has confirmed that. Check through the discussion threads on the iOS 5.0.1 releases (latest still on the front page of MR).

If you try to input text using the keyboard after activating Siri the clicking sounds also become very loud. Hopefully this is fixed soon.

Yep, go to sounds and just tap the ringer volume slider. It should correct the volume until it happens again. Hope it is fixed in 5.0.1.
