I heard that there is additional steps I need to take to do a factory reset of a 2019 MBP i9 running Monterey because of the OS and T2 chip?

A few google searches told me just to do System Preferences -> Erase All Contents and Settings

I currently have a Bootcamp instance running with about 200GB dedicated partition. Will the above automatically reset everything including partition and wipe Bootcamp too?

Should I deauthorize my AppleID/Music/iMessage. beforehand or will this utility take care of it?

(Yes, already did a full time machine backup too!)

"Erase all Contents and Settings" won't touch your Boot Camp partition but will take care of everything else for you. Details are all covered in Apple's document about this.
