Family sharing seems to be more for families with Children and parents not wanting kids to have purchase abilities. However in our house we are only 2 adults (wife and myself). I just got my wife an Apple Watch for Christmas. She has her own iphone and ipad and her own itunes account and years worth of apps.

Everything I've read seems to indicate if I enable family sharing, I will need to start authorizing all of her purchases and that is not going to fly. I can turn off sharing purchases (I think) but we can't share apps that way (which is fine) but can you still share subscriptions if you do? Not in-app purchase subscriptions, but the apple service subs like fitness, tv+, etc.

We have an ATV4K on our "main TV" with years of itunes purchases using my itunes account. That said since she has the watch I would like to share the 3 month Fitness+ trial that she gets with the new watch but it would be on her itunes account.

I sub to Apple Music, but she is on spotify, and my apple music is only an individual annual sub so I can't share it. That said it runs out end of March at which point I may get Apple One depending on if I like Fitness+ trial which I would like to share with her.

We also use homekit throughout the house (garage door, lights, etc..) and until recently she avoided it but I would like to share the home with her. I don't think this is done via family sharing, but an invite from the home app but I am not sure.

You'll need to authorise her purchases only if she made a mistake in her age on her Apple ID. Else for 18+ no authorisation is required. Keep in mind that if you set up the family sharing using your account, everything (her purchases and yours) will go through your credit card.

I think subscriptions go with apps purchases, but for the rest you can choose what to share or not. You will have to choose from this menus :

If I am not mistaken, you'll be able to access her trial of fitness+ but she will need to activate the option in the Family settings on her iPhone (others will correct me if I am wrong)

You are right, sharing a Home is done directly from its app and is independent of iCloud Family Sharing
