When I'm on a video call in skype the fans in my macbook go crazy and the CPU usage for Skype goes up to ~110%, even when its the only app open.

I'm using:
Macbook 2.16GHz C2D, 1GB RAM, on 10.4.11
Skype v.2.7.0.257 (latest version as of 20/04/08)
It has only been apparent since I downloaded the latest Skype update.

Any suggestions?

Yeah that happened to me quite a few times on my black MB with Core 2 solo. I think its just too much for the processor and its getting really hot. Even now on my MBP 2.4 and 4GB of RAM CPU jumps to like 60% with 640x480 resolution.
 
Mine does this as well and drives me crazy. Not sure why a reasonably small-ish skype video window would cause the fans to scream like banshees when a higher-res and larger quicktime video doesn't even bump up the core temps.
