Want to use my iphone 13 pro more for enthusiast photography. What are the best/favorite manual control photo apps with zero processing options, and also with good privacy policies?

I know Halide is popular ive tried it a year ago but never gave it a real chance but since the trial is up ill have to buy a year straight up to try again, what are some other popular ones, or is it just Halide?
the reason i been looking for a third party app is i cant stand when im taking pics i cant just dial in the exposure and white balance. i was taking pics in a botanical garden in the shade and everything is over exposed and sharped like crazy on edges and the white balance was super under saturated and pale. i had to expose for the sun coming through the trees and lock it in and then point down to the subject which was in the shade of a tree to get the exposure i wanted. super annoying.

basically so often when i take pics that are not in simple open sky direct sunlight i have to fiddle with tap focusing on random BRIGHT objects in my environment to get the camera to tone down the exposure and processing and then lock it in. so many extra steps. i want to dial it in, lock, and take pics.

dont get me started on the extra hdr processing the pics get after i take them once i open photos app
