Favorite Tag Color Keeps Disappearing – Any Fixes

Recently, one of the colours in my Favourite Tags section keeps disappearing.

Sometimes I have to reassign it three or four times before it finally stays and repopulates across all my files.

Any idea why this is happening or how to fix it?
