I'm funny in that way, I'd prefer have my iPhone play my highest rated music rather than my lowest rated music, which is currently how my phone arranges songs in "favorites" under my playlists. How do I sort it from best to worst instead of worst to best?

"favorites" playlist is worst to best. How do I rearrange?

It's supposed to match how you have the playlist set in iTunes. Change it there and re-sync.
I say "supposed to" because this feature is often broken by updates before being fixed again. Right now in 5.0.1 I have my iTunes playlist set from newest-to-oldest but my phone is showing it as oldest-to-newest.
5.1 will probably fix it and I fully expect 6.0 to break it again. It's a historically finicky feature.
