Can anyone advise if there are fax over IP software out there? I have an Asterisk SIP PBX and would like an application on the Mac that will allow me to send faxes via SIP, either an app that does it, print to fax or email to fax.

I've been researching this as well and it looks like most run as a service and don't provide just an application.
I think you probably need to search for an email-to-fax or web-to-fax solution that someone has come up with for Asterisk.
In the case of my home VOIP service, there's a web-to-fax page in their website's user control panel.
