This started happening about a year ago - Safari suddenly decided I didn’t have the power in choosing the order of my tabs, so it started rearranging the order of them.

Absolute disaster of a decision - yet another from IOS18….

When will this abomination of an IOS stop going backwards?
 
My Safari tabs seem to remain in the same order as I opened them. Maybe OP can describe the issue in more detail and post some screenshots.
 
Hmm, I place my tabs in a certain order, but soon after, they’re automatically ordered by title name (when I didn’t select either of the two sort options - by Name or by Website).

The only way to kind of avoid this is to pin a tab - which will then always keep that tab first, but if I pin another & it alphabetically comes before the original pinned tab, then those two pinned tabs will also be re-ordered.
 
It sounds like you might be using a tab group? Sorting tabs is a feature of tab groups: https://support.apple.com/guide/iphone/organize-your-tabs-with-tab-groups-iph3028ebf68/ios
I am using Tab Groups!

But i've been using them for a while & the auto-rearrangement didn't happen initially. I'm pretty sure IOS18 did something because it was around that time when I noticed my tabs being shuffled. Also, I didn't select 'sort by NAME or WEBSITE' to alter the way they were sorted.
