The Apple Pro Training Series books are good. Check out http://www.apple.com/software/pro/training and get some of those. You could also check out the "Hands On Training" books.
I sweat it, meaning I had a project to do so I just learned FCP while trying to finish up a project. I think you'll learn much faster just by doing instead of reading the manual or watching instructional videos.
Start with the basics like capturing footage... which the manual will be helpful, but once you do it for a real project, you'll learn FCP so much faster. Just hit the floor running, or so the cliche goes.
Try http://www.lynda.com, they have tons of tutorial videos for loads of apps, I always feel that videos are easiest to learn from, so Lynda is a good choice, and it is relatively cheap for what you get at $25 a month.
