Quick question.

I'm not a fan of file extensions showing up in my files, so I choose not to have them show by unchecking the checkbox in the finder preferences. However, many files still show the extension. Anyone know why this is?

The program you are saving the photos in might be adding the .jpg to the file name and that's what you're reading.
Get the file info on one and see if it's xxxx.jpg.jpg

that's what I was thinking, but it is correct in the get info pane. I notice in the get info pane there is a checkbox for "hide extension" that isn't checked in any of them.

It's almost as if the finder preferences don't apply to jpg.
