I'm fairly new to the Mac and I'm playing around with networking a Windows laptop with my Imac. I am able to do filesharing from the laptop using SMB, but, once I enter my user name and password in the permissions box on the laptop I am able to access my entire Mac filesystem, not just my public folder on my Mac, even though my public folder is the only folder listed in Sharing Preferences. Am I missing something? Thanks.
 
Since you connected as your user it automatically gives you access to your user's home folder. If you connected as another user the only folder you'd be able to see is the shared/public folder.

To turn off sharing go into the sharing system preferences panel and turn off sharing.
