I wish to prevent a non-admin account from unlocking my disk, however, it seems you can only choose who can unlock the disk when you first enable FileVault. Once it is enabled down the line, I can't find a way to change this.

Anyone?

Yes, bring up Terminal and you can do the following:

sudo fdesetup remove -user username
