Maybe I'm just dumb and this was expected behavior, but considering that the MP5,1 doesn't support FileVault I wasn't expecting this to work on the MP3,1.
I'm even booting via rEFInd, just selected the 'preboot' drive (as the actual drive is not listed once being encrypted) and it prompts for the drive password and boots fine.

This was a clean install using the patcher tool. I've done bootROM mod for native APFS NVMe.
I'm also happy to report that my LSI MegaRAID SAS 84016E card still works too as it had no issues seeing my 4 drive hardware raid array :)

Nice report! Not terribly surprising though. Apple doesn't expect Mojave to be running on a MacPro3,1. It probably just checks the model identifier, and only throws up the roadblock if it's "MacPro5,1" specifically.
