So I have about 30GB worth of music, and naturally, I can't fit it all on my iPhone. So I decide to make some playlists, and just sync those. Problem is I only have 2GB worth of playlists made and I want to sync other music too, but not all.

Can I sync my iTunes with my iPhone with random songs? BUT I don't want to have 0kb of free space on my phone. Can I give it the option to fill free space up until 1GB remains or something?

No, you can't select how much free space to sync.

you could maybe select that specific artist sync instead of just playlist.
 
Make a smart playlist in iTunes to select the songs based on whatever criteria you want.

Then select the 'Limit to' checkbox and set the size you want to fill. Select 'random' from the pop-up menu.

It can't auto select the size based on your iPhone's free space, but you can randomly select songs up to the set size.

To update the random songs chosen, you have to edit the smart playlist to unselect the 'limit to' checkbox and then edit it again to reselect the checkbox again.
