i have an HD video file that i am ready to send to iDVD, and using quicktime conversion, it gives me the option to deinterlace, my final destination is a DVD via iDVD that can be played on computers and DVD players. should i deinterlace the video or not?

If the source is interlaced then leave it interlaced.

Video DVDs contain SD video which is most of the times interlaced anyway due to the nature of the two broadcast systems used for video DVDs, PAL and NTSC.
