I have the mac mini late 2012 server edition with the 2.3 Ghz CPU, 16GB of RAM and the two 1TB mechanical drives it came with.

As I see it I have three options.
1. Leave it as is.

2. I don't have the money to actually purchase SSD(s) but I could cannibalize 2 SSD from other systems (PC) I have. One 250GB SSD from ADATA IIRC, and one 1TB Samsung 850 evo.

3. I could in theory acquire an external SSD, for example the 256GB EX1 from Plextor to use as an additional (external) drive.

While obviously any of the latter two options would give me increased performance, any of you knows from experience if it would be worth it, strictly for editing with Final Cut Pro X. I don't care about booting speed and I won't be using it to run many programs at the same time, gaming, or whatever else. Just video editing.
 
Keep your 2 1TB in an enclosure(s) to store your media and possibly your Libraries
 
They arrived today. Too late to install them without messing something up.
